Delicious apple pudding cake recipe
How to make it: Start by peeling the apples, removing the peel and pits, then put them through a large grater. These will add a fresh flavor and nice texture to our cake. Mix the grated apples with the sugar, vanilla sugar and cinnamon to intensify the flavor. Transfer the resulting mixture to a 23x32 cm baking tray lined with baking paper. It is important to spread the apples evenly in the tray and press them down well with a spoon to create a solid base for the cake top.
Now we're on to the topping: separate the yolks from the whites. In a mixing bowl, whisk the yolks with the sugar, adding gradually and continuing to mix until the mixture becomes creamy, of a consistency similar to cream. Then, start adding a tablespoon of cold milk at a time to get a smoother texture. Once we're done with the mixer, we take a whisk and start incorporating the sifted flour mixed with the baking powder. Don't forget to add the lemon zest, which will add a touch of freshness to the cake.
Whisk the egg whites with a pinch of salt and gradually add them to the yolk mixture, stirring gently with a spatula to keep the air in the egg whites. Pour the resulting batter over the apple mixture in the pan and level well with a spatula. Now place the pan in the preheated oven on medium heat for about 45-50 minutes, or until the top is lightly browned. Test with a toothpick to make sure it's cooked through. Once it's done, remove the tray from the oven and leave to cool for 15-20 minutes, then carefully invert onto a platter, removing the baking paper.
For the pudding, mix the pudding powder with the sugar and 150 ml of cold milk. Put the remaining milk in a saucepan over a low heat and, when it starts to boil, turn off the heat and add the pudding mixture, stirring constantly. Return the saucepan to a low heat and simmer for 1-2 minutes, stirring with a whisk, until the mixture thickens. When done, let the pudding cool, covered with foil to prevent crust formation.
When the pudding has cooled, use the mixer to incorporate the whipped cream, resulting in an airy and delicious cream. Hydrate the gelatine in 3 tablespoons of cold water, then heat it up (without letting it boil!). Take 2-3 tablespoons of the pudding cream and mix with the hydrated gelatin, then add the mixture to the remaining cream. Leave the cream in the fridge for a few minutes until it starts to thicken.
Finally, pour the pudding cream over the apples in the pan and gently level. Leave the cake in the fridge for 2-3 hours, then cut into pieces and decorate with chocolate pudding and a sprinkle of cinnamon. This apple pudding cake is sure to become a family favorite. Enjoy!
